BACK FROM THE MIDDLE EAST



Back from an Egypt of clear skies, hot days

and very friendly, hard-working people. More on this later.


The weather today here is poor at the beach, and i need the time to catch up anyway. Yesterday was a long travel day, about 27 hours, and it poured all day here anyway.


While in Africa I picked up some good recipies, which i will pass on in the future. Here is a gtreat appetizer for about 4 to six people.

It is quick and easy to prepare.
Chickpea and Olive Appetizer
Serves 4 to 6.

1 10 oz. can Chickpeas ( Garbonzo Beans) - drained
1/2 cup black olives, chopped
1/4 cup scallions, finely chopped
2 tablespoons finely chopped fresh coriander leaves (cilantro)
1 clove garlic, crushed
salt to taste
1/2 teaspoon paprika
1/8 teaspoon chili powder
1 tablespoon olive oil
2 tablespoons lemon juice
Mash the chickpeas in a bowl or pulse them in a blender and then spoon the paste into a bowl.
Add the remaining ingredients and mix thoroughly. Serve immediately.
That is all there is to it.
You can serve it along with chunks of fresh crusty bread or crackers
