AT THE BEACH THURSDAY - PEAR FRITTERS


It's another day in beautiful Hollywood. The air is about 80 and the breezes are still out of the South East. The ocean is perfect for swimming.
One may wonder what goes on in John McCain's head at times. He just made a statement that he really needed to make a serious choice in VP candidate because he himself might not live through the entire four year term if he actually elected. Please, as if the Republican party didn't have enough to worry about.
Well here is a treat for trim beach goers.
Bosc Pear with Sharp Cheese fritters
Bosc pears - medium - 4
Sharp Cheddar Cheese
Flour - 1/2 cupEggs - 2 large - beaten
Breadcrumbs - 2 cups
Canola Oil -
Cut 1/4 vertical slices from each side of the pears. - discard the cores.
Cut crosswise from a block of sharp cheddar cheese 1/4 inch slices, 16 in all.
Alternate the pear and cheese slices, so you get little sandwiches of 3 pears and 2 cheese.
Coat these 8 sandwiches lightly with flour . then brush on the egg and coat with bread crumbs
Pour the canonla oil into a heavy skillet at about medium heat. Cook the pear fritters in batches for about 2 minutes per side, until golden brown. pat dry with a paper towel and serve on a bed of spring lettuce with vinegrette dressing.
