AT THE BEACH - WEDNESDAY - Zucchini & Cheese

It is just like summertime today. The easterly breezes are light and the numbers are all in the 80's, The tide is high at mid-day so it makes swimming real easy with green flags flying.



If you want to avoid seeing a nose grow like a wooden puppet then don't watch Ryan Crocket
as he lies to Congress. Besides, the man cannot speak without saying "ah" every three words.
He sits along side General Betray-us. They have the unmitigated gaul to say we are doing just fine in Iraq. They would just like a few trillon dollars more.

It is all too much for any budget but here is an easy dish to fit anyone's

ZUCCHINI WITH 3 CHEESES

4 to 5 Zucchinis – cut off ends and julienne ¼” thick
Fontina cheese ½ lb – grated
Mozzarella cheese - ½ lb. grated
Romano cheese – ½ lb. – grated
Chili Stuff Chili Mix – 2 tsp
Heavy Cream
Bread crumbs
Kosher Salt
Black pepper – freshly ground

Butter



In a shallow baking dish. (Glass or Porcelain) Coat bottom with olive oil.
Lay out one level of zucchini.
Then shake on salt & pepper and Chili Stuff
Add the 3 cheeses in an even cover, about a good handful of each.
Cover this layer with bread crumbs.

Repeat the procedure for a second layer
Top the second (top) layer of bread crumbs with dots of butter (about 2 TBL)
Place in an oven of 375 degrees for about 40 minutes.

Delicious with about anything.
