THURSDAY AT THE BEACH - HOT BACON DRESSING for SALAD

For the last two days the skies were clear but the NW winds were strange and cool. At least the ocean was warm for swimming and the wnds mad the southerly direction very easy. It is that way today but it is finally getting warmer and the winds have subsided. It should get to at least 80 degrees today.

Here is a real easy dressing that can be drizzled over a warm or chilled salad.


Hot Bacon Dressing with green beans Salad

½ lb. Bacon, cut into pieces
Vinegar – 1 cup
Sugar – 1 cup
Water – 1 cup
French cut green beans, frozen – defrosted – 2 pakages

Fry bacon to crisp -- Save out (remove) about 4 TBL of fat
Add vinegar, sugar, water – simmer for 5 minutes

Put beans in a kettle with hot dressing and cook until tender but still bright green.
Serve hot,
or plunge beans into ice water to stop the cooking and serve them chilled, with the warm dressing drizzled over.
