BLUE SKIES WARM DAYS - Italian sausage & Risotto

It is all sunshine and warm sands with pale tourqoise water today. The winds are gone and the beach is perfect for the start of a long weekend.

HEALTH HINT

Stress: Take a deep breath and enjoy the beach Let those who are being paid to fix things do the fixing, because stress can aggravate allergy symptoms and may also trigger strong responses to allergens.

Italian Sausage, Risotto & Broccoli Rabe

Mild Italian Sausage - 1 lb. ( about 5)
Aborio Rice - 1 1/2 cups (uncooked)
Broccoli Rabe - Fresh - 1 big bunch.

Use4 a big pan and break the sausage into bite sized pieces, after ssqeezing from skins and cook at medium heat in olive oil.

Whikle this is cooking boil the Broccoli rabe in water until tender but still bright green. Then plunge into a large bowl of cold water to stop the cooking process. Removw from cold water a dry off. Set aside

When the risotto is jst about cooked add the sausage and the broccoli rabe and stir and add a little dry vermouth and a couple TBL of butter. Then cover for long enough for all ingedients to get to an even temperature.

Serve with crusty bread and a dry red wine.
