CLOUDY NE BREEZE - Stuffed Tomatoes with Lamb peppers and squash

The humidity is down to match Hawaii at 56%
The air will only reach the mid 70's the same as the ocean. Northeast winds at about 20 MPH continue but the water is clean and the depth is great for swimming along Hollywood Beach
Lots of sun inbetween the clouds.


STUFFED TOMATOES - LAMB PEPPERS SQUASH

Lamb, ground - 1 lb
Rice, short grain - ½ cup - uncooked
Onion - 1 - chopped
Tomatoes - 2 - chopped
Italian parsley - I bunch -stemmed and chopped
Kosher salt - 1 big tsp
Black pepper fresh ground - 1 big tsp
Green peppers - 3 - cored and chopped small
Zucchini squash - 3 - chopped small
Tomatoes, large whole - 4 - tops removed and cored
Olive oil - 1 TBL
 
Brush baking pan with oil
Mix all ingredients together and stuff the tomatoes.
Place the stuffed tomatoes in the pan and fill with water.
Cover and bake at 375 for about 1 to 1 ½ hours.
