COLD NW BREEZES - Fish Fillets with Anchovies

Clear skies with light winds from the North will keep the water temp at Hollywood Beach at about 74. That is warmer than the air that probably won't get above 70 today. The ocean is low and even though there is a lot of sun it will be empty.



FISH FILLETS WITH ANCHOVIES

Fish fillets - 4 - (sole, or perch, or cod)
Anchovy, fillets - I can
Butter - 1 stick
Flour
Lemon juice - 1 lemon
Italian parsley - a small bunch, stemmed and chopped
Kosher salt
Black pepper fresh ground
Watercress, fresh
Lemon wedges

Dredge the fish in flour . Put about 4 TBL of butter in the heated pan and sauté the fish until nicely browned , about 4 minutes per side. Salt and pepper to taste. Remove to a warm serving dish. Put a couple of anchovies on each fillet. Add the rest of the butter to the pan. Now whisk together with the oil from the anchovy can, lemon juice and parsley. Pour this over each serving after you have placed the fish on a bed of watercress with lemon wedges on the side. Serve right away.
