COOL NORTH WINDS - Cornish Game Hens

The sun feels pretty weak today and the air will only get to the high 60's. The breezes are from the North at about 10 to 15 MPH. This will make the ocean seem warmer than its real temp of 76.
The tide is back up most of the day and the water is clean. When you dive in it won't be crowded because the beach will feel cool.

CORNISH GAME HENS

Game hens - 2

Olive oil

Kosher salt

Blaack pepper, fresh ground

Carrots - peeled and chopped

Red potatoes, small

Onion, chopped

Use a pan with a rack. Salt & pepper the birds,inside and out and place them breast side up in the rack and bake at 300 for about 1 hour. After 15 minutes baste with the olive oil. Toss into the roasting pan the onion, carrots and potatoes on top of a few TBL of oil. Baste the birds again when they start to look dry.
