There is almost no breeze today. The tide is out most of the day and the humidity will make it to the 90's. The low water level will still make it possible for a refreshing dip. There is no worry about rip currents.
SPINACH & RADICCHIO SALAD
Spinach leaves.- 2 big handfuls
Radicchio 1 head
Red grapefruit - 2 - peeled - cut into bite sized pieces
Olive oil
Balsamic vinegar
Kosher salt
Black pepper, fresh ground
Dates - chopped, - ½ cup
Scallions , 2 - thin slice
Almonds - chopped , ¼ cup
Use a large mixing bowll and combine the spinach and radicchio. Toss in the grapefruit and then drizzle the whisked oil and vinegar. Salt & Pepper to taste. Stir in the dates and onions. Sprinkle with the pecans.
