Savory WHITE BEAN & TOMATO STEW
Tomatoes, Fresh - 3 lb - cored & diced
White Beans - 1 can - 15 oz
Olive oil - 2 TBL
Basil, dry broken leaves - ½ cup
Garlic, 2 loves - minced
Mozzarella - ½ lb - - ½” cubes
Kosher salt
Black pepper. Fresh ground
Parmesan - ½ cup
Combine the tomatoes with the basil and salt & pepper to taste. Let stand for about 15 or 20 minutes,
Heat a large pan to medium low and heat the beans for about 5 minutes, stirring occasionally.
Add the tomatoes and the mozzarella stirring until cheese Is soft.
Serve in bowl with a generous sprinkling of parmesan on top.
