EASTERN ON SHORE BREEX, SUN - HUMMUS CRUSTED CHICKEN BREAST



The tide is up and the eastern breeze is light.

Lots of sunshine, no waves.



HUMMUS CRUSTED CHICKEN


Chicken breasts - 4 halves, boneless, skinless
Hummus - 4 oz
Olive oil
Kosher salt
Black pepper, fresh ground
Italian bread crumbs
lemon wedges

 
Paint chicken with olive oil. Sprinkle on pinches of salt and pepper.
Spread the hummus over the breasts and roll in bread crumbs
Heat a deep pan to medium . Add a couple of TBL of oil. Cook chicken for about 12 minutes, turning once, the bread crumbs should be brown and the breasts flaky.. Serve with lemon wedges.
