CORNISH GAME HENS
Serves 4 ---Total cooking time = 7 hrs.
Cornish game hens -4
Celery, 4 - peeled and chopped
Carrots 4 - peeled and chopped
Parsnips 4 -peeled and chopped
Chicken necks & backs - 4 lbs.
Garlic - 2 cloves
Onion - 2 halved
Garni bouquet - (bay & parsley)
Leeks - 4 white part, halved
Potatoes, small Yukon gold - 8
Water - 5 qts.
Kosher salt
Black pepper fresh ground
Peel the vegetables. Place the garlic and 1 onion and chicken pieces
in water and bring to a boil then simmer for 3 hrs. add the hens and simmer for 2 ½ more hours. Add the vegetables and simmer for 1 ½ hrs
Remove the hens and cool. Put hens, one each, into a bowl and ladle in the soup with vegetables to cover. Pinches of salt and pepper to taste. Serve with fresh crispy garlic bread.
