PANINI W/ MUSHROOMS & GRUYERE
Fresh Spinach , leaves , stemmed - 5 or so oz.
Mushrooms fresh, 8 oz.
Bell pepper ¼ cup, sliced
Onion , chopped
Gruyere, shredded - 1 cup
Mustard, Dijon - 4 tsp.
Wheat bread slices
Butter 3 TBL
Black pepper -pinches
Heat butter in a large pan at medium, add mushrooms for about 5 minutes.
Spread mustard on bread. Layer each piece with 6 spinach leaves. Pinches of pepper, 1 TBL mushroom and onion and a covering of gruyere. Place in between
Parchment paper. And bake in a press for a couple of minutes until bread is golden and the cheese is melted. Brush with the melted butter and cook for another couple of minutes until bread is crisp.
