Light NE breeze - Baked Italian Fish Fillet

The breeze is still coming out of the NE but it is much lighter today and the ocean is calm . The tide will be ebbing most of the morning and will be lowest about noon. clear skies.


Italian fish fillet, baked with red potatoes


Fish fillet - 1lb. , sliced in half


1 pack of fresh frozen peas, thawed


Small red potatos, 6 - cut in half




Marinara sauce - 1 cup


Chicken broth - 8 oz


Sea salt


Black pepper, fresh ground


Olive oil - 2 TBL


Preheat Parsley dry - 1 TBL


Butter - 2 TBL.


Boil potatoes, paint fish fillets with olive oil an sprinkle one side with pepper.


Preheat oven to 380, use a large pan at medium and place the fish on olive oil pepper side down. After a couple of minutes sprinkle on a covering of bread crumbs. Heat the frozen peas in chicken broth. Warm the marinara sauce. Flip the fillets and cover pepper side with bread crumbs and place pan in oven. For about 5 minutes


Serve fillets on plates with equal amounts of potatoes sprinkled with parsley, butter & pepper & salt to taste add the peas and a good scoop of marinara sauce
