ROAST BEEF PANINI W/ ARUGULA
Rare roast beef, sliced thin - ¾ lb.
Onion , sliced crosswise and thin - 2 cups
Mayonnaise - 3 TBL
Horseradish, prepared - 1 TBL
Salt
Pepper, fresh ground - pinch
Arugula - 1 bunch, stemmed
Butter
In a large pan at medium cook the onion slices until golden with butter salt & pepper.. Lay the roast beef on a slice of white bread spread with mayo. . Lay the onion and arugula on top. Cover with another piece of white bread with horseradish and mayo and place between sheets of parchment paper .
Cook in a press until bread is golden.
